At the Market Before Six

What the resident chef looks for at Pasar Ubud, and why timing decides the menu.

The Ubud market that tourists photograph at ten in the morning is not the market. The real one finishes by seven.

The chef goes for four things: young jackfruit, river prawns, ceremonial-grade coconut oil, and whatever the highland growers have brought down overnight. The menu is written on the drive home.
